Hot Smoked Dried Peppers from La Vera by La Chinata
La Chinata, Spain’s No. 1 paprika manufacturer, has recently launched these three new products on the market:
Sweet Smoked Dried Ñora Peppers, Bitter-Sweet Smoked Dried Peppers and Hot Smoked Dried Peppers, all of them from La Vera in Extremadura, western Spain.
These products are made using exactly the same raw materials as used for the production of their popular Smoked Paprika Powder.
All three varieties are grown and dried in the region of ‘La Vera’. The drying process is still done in the traditional style with oak wood, in a process that takes between 10 and 15 days, depending on the weather conditions.
The harvesting of the peppers, which is done entirely by hand, occurs during the months of October and November, after which the peppers are carefully selected and cleaned before processing.
The Ñoras are slightly Sweet, whereas the Peppers are either Bitter-Sweet or Hot, and all of them are ideal to provide flavour, colour and aroma to your favourite dishes, such as rice, meat or fish stews, legumes or sauces.
These products can be used as is, or only their flesh can be extracted after soaking in water for a while.
